Il a peu de perte, il est facilement manipulable. Pour les sushis, on a besoin de bien moins de Cobia qu\u2019avec un autre poisson. Il est possible de r\u00e9aliser des tranches incroyablement fines sans qu\u2019elles soient cassantes.<br \/>\nC\u2019est un poisson au gout frais et d\u00e9licat. Du coup, on le marie ais\u00e9ment \u00e0 d\u2019autres ingr\u00e9dients que nous ne sommes pas habitu\u00e9s \u00e0 utiliser en sushis de poisson. On peut faire beaucoup de sucr\u00e9-sal\u00e9 par exemple. J\u2019ai r\u00e9alis\u00e9 \u00e0 diff\u00e9rentes reprises un sushi Cobia avec une belle tranche de mangue et un maki Cobia framboise. C\u2019est toujours un succ\u00e8s. Au niveau de la chair, on l\u2019apparente aux meilleurs espadons, il a un gout tr\u00e8s d\u00e9licat et une chair assez ferme.
